Its story
Was born in Burma, eaten in India, appealing China, aubergine was grown on migrating West. Its perilous travel was mostly impressed by the year 1000 when it was accused to engender leprosy, epilepsy… A nearly fatal anecdote. It is « Roi Soleil » who imposed it in his vegetable garden, without any big success! On the 18th century, it was used as a cataplasm. It is necessary waiting 1825 and brilliant Découffé (inimitable trucker)for the end of its anonymity.

Aubergines are picked up before their maturity.. Well mature, these vegetables-fruits displays a weird copper-colored aspect… Their flesh, full of little black seeds is proved too bitter for our western palates. So it is young that aubergines are at the best of their quality and subtle scented flesh, so that they go without soaking. in France, aubergine is essentially produced by regions like : Provence-Alpes, Côte-d'Azur, Aquitaine, Languedoc-Roussillon. the high season of this vegetable-fruit is from July to September.
The varieties
Uncontested queen of Mediterranean cooking, it is most of the time purple, sometimes yellow, white, crimson or black. Nowadays, the white one doesn’t attract someone anymore , its colour make it suspect and the China’s one has become seldom. However, tenderness and delicacy of its flesh s charmed more than a gourmet.
